All You Need

5 ozOatly Barista Edition
1 1/2 ozcold brewed matcha
Black sugar syrup
  • 50 g okinawa black sugar
  • 100 g hot water
Hojicha cold foam
  • 200 g Oatly Half & Half
  • 6 g hojicha powder
  • 50 g simple syrup
  • Small pinch of salt
  • 1/4 tsp xanthan gum
Ice
Cold brewed matcha (ingredients per portion):

2-3 gmatcha powder
5-10 gagave syrup (optional)to taste
Salt(small pinch)
30 gcold water

Tools

  • Glass
  • Whipped cream syphon and chargers
  • Saucepan and stovetop
  • Cocktail shaker
  • Whisk + bowl
    • or Blender

To-Do List

For the cold brewed matcha (1 portion):

  1. Sieve the matcha into a bowl or cocktail shaker​
  2. Add all other ingredients​
  3. Whisk or shake vigorously for 30 sec​

For the cold brewed matcha (multiple portions):

  1. Add all ingredients to a blender
  2. Blend on low speed for approx 20–30 sec until no matcha lumps are left
  3. Chill immediately

For the black sugar syrup:

  1. Add sugar and hot water to a pan over low heat
  2. Stir to dissolve the sugar
  3. Bring to a boil, then remove from heat and let cool

For the cold foam:

  1. Blend hojicha cold foam ingredients together, then add to a whipped cream siphon
  2. Dispense gas into siphon, shake and set aside

For the drink:

  1. Add 3/4 oz of black sugar syrup to a glass
  2. Add ice and Oatly Barista Edition
  3. Top with matcha
  4. Finish the drink with the cold foam
