All You Need

| 5 oz | Oatly Barista Edition |
| 1/4 tsp | salt |
| 1/4 tsp | lactic acid powderor 33 g lemon juice |
| 1 3/4 oz | boiling water |
| 15 g | hojicha powder |
| 2 oz | maple syrup |
| 4 dashes | orange bitters |
| 8 1/2 oz | non-alcoholic spiced spirit(or rye whiskey) |
Garnish: orange twist

- Glass
- Electric mini whisk
- Large vessel
- Paper coffee filters
- Peeler(for orange zest)
To-Do List
- Add salt, acid, hojicha and boiling water to a vessel and mix with an electric mini whisk until dissolved
- Add maple syrup, bitters, rye and chilled Oatly Barista Edition (this should curdle)
- Pass curdled mix through paper coffee filter until the mix is clear (you will have to pass the first cloudy bit through a second time)
- Bottle the clear mixture and store in fridge
- To serve, pour 4 oz over clear ice and garnish with orange twist
Step 3 is important: if you skip this, the clarified mix will become hazy as soon as it is poured over the ice
