All You Need

150 mlOatly Barista Edition
Mate cola syrup
  • 1 L filtered water
  • 40 g yerba mate tea
  • 2 limes
  • 2 oranges
  • 3 broken cinnamon sticks
  • 2 tbsp whole coriander seeds
  • 2 tsp dried oregano
  • 800 g raw coconut sugar
  • 80 g tamarind puree

  • Cup
  • Saucepan and hob
  • Infusion bag
  • Sieve

To-Do List

For the syrup:

  1. Peel off large strips of lime and oranges zest, then juice the fruit and put to the side
  2. Put the yerba mate tea into a reusable infusion bag, tie and add to a pan with boiling water
  3. Allow to infuse for 5 min, then remove
  4. Add the rest of the mate cola syrup ingredients to the pan, except citrus juices, and bring back to a boil
  5. Cook for 1–2 minutes
  6. Remove from heat and add the citrus juices
  7. Strain and store in the fridge

For the drink:

  1. Add the 20 g syrup to a cup
  2. Steam Oatly Barista Edition and pour over the syrup
