All You Need

150 mlOatly Barista Edition
40 mlcold brewed matcha
Mochi balls
  • 170 ml Oatly Barista Edition
  • 100 g glutenous rice flour(plus more for dusting)
  • 40 g sugar
Matcha cold foam
  • 200 ml Oatly Cold Foam
  • 5 g matcha powder
Cold brewed matcha (ingredients per portion):

5-10 gagave syrup (optional)to taste
0,1 gsalt(small pinch)
30 mlcold water

Tools

  • Glass
  • Blender
  • Foaming toolsiphon/electric mini whisk/spindle mixer/blender)
  • Saucepan and hob
  • Cocktail shaker
  • Whisk + bowl
    • or Blender

To-Do List

For the cold brewed matcha (1 portion):

  1. Sieve the matcha into a bowl or cocktail shaker​
  2. Add all other ingredients​
  3. Whisk or shake vigorously for 30 sec​

For the cold brewed matcha (multiple portions):

  1. Add all ingredients to a tall container​
  2. Blend with an immersion blender until​ there are no matcha lumps left​

For the mochi balls:

  1. Whisk all mochi ball ingredients together until smooth
  2. Add to a pan and heat, stirring until the mixture comes together and forms a sticky dough (prepare for an arm workout)
  3. Pour into a container and chill
  4. Dust a flat surface with extra rice flour
  5. Cut small pieces of the mochi mixture, rolling in the rice flour to keep them from sticking together

For the drink:

  1. Add 40 g of mochi balls to a glass
  2. Top with ice, Oatly Barista Edition and cold brewed matcha
  3. Foam the matcha cold foam ingredients together using your preferred foaming tool
  4. Finish the drink with aerated cold foam
